Savory Italian Crepes

Ingredients

Crepes:

  • 4 eggs
  • 2 tablespoons coconut flour
  • 1 tablespoon olive oil
  • 1/2 cup water
  • 1/2 teaspoon sea salt
  • Olive oil for cooking

Filling:

  • 2 tablespoons olive oil
  • 1 cup cooked and diced chicken
  • 1/2 cup roasted tomatoes
  • 1 teaspoon Italian seasoning
  • 1 tablespoon capers

Instructions

Directions:

  1. First make the crepe batter by combining the eggs, coconut flour, olive oil, water, and salt in a blender. Blend, on low, until well combined. Let stand for five minutes.
  2. To prepare the filling, combine the ingredients in a bowl and mix well.
  3. Heat a tablespoon of olive oil in a 8-inch, non-stick skillet over medium low heat. Pour about 3-4 tablespoons of batter into the pan and let it spread to the edge of your pan. Cook until bubbly, then carefully flip. Continue cooking for about a minute, and then transfer to a plate. Continue cooking until batter is gone.
  4. Fill each crepe with the filling and serve warm.
