Bacon and Mushroom Omelet

Ingredients

  • 2 tablespoons grass fed butter
  • 1 cup sliced mushrooms
  • 3 eggs beaten
  • 1/4 cup cooked and crumbled bacon
  • Sea salt and fresh ground pepper to taste

Instructions

  1. Melt the butter in a heavy skillet and add the mushrooms. Cook until browned and remove from pan with a slotted spoon.
  2. Add the eggs and cook for a minute until the edges are set.
  3. Lift the edges carefully and let the liquid flow underneath the edges.
  4. Top with the mushrooms and bacon and carefully fold in half.
  5. Continue cooking until eggs are done.
