Burrrrr! Currently it’s a balmy twelve degrees outside, there’s snow falling, and all I want to do is curl up with pup, and sip on something hot. Since I’ve already surpassed my morning coffee allowance, I’m opting for a caffeine-free tea and checking out what I have in my fruit bowl.
Though I used pineapple and lemon for my juices, you can easily substitute another citrus fruit – oranges or grapefruits perhaps. The pineapple juice gives the tea just enough sweetness for there to be no need for a sweetener. Since this is a caffeine-free drink, it is a great treat to have in the evening when you get cravings for things not-so-paleo.
Pineapple Ginger Tea
- 3 Tea bags (I've used both citrus- and lemon-infused teas)
- 5 cups water
- 5 1/2 ” cubes of fresh cut pineapple
- 4 slices Nickel sized fresh ginger
- 1 halved lemon
Boil water in saucepan (or tea kettle) on stove top.
Juice the lemon half. Once fully juiced, DO NOT throw the lemon half away as you will use it to help juice the fresh pineapple. Place one piece at a time in the empty shell of the lemon, using it as a cup to grip as you juice.
Pour lemon-pineapple juice and ginger slices into the heating water. (There is no shame in eating the leftover muddled fruits.)
Once juice is boiling, cover and simmer for two minutes.
Once complete, remove the pieces of ginger before adding to tea kettle and tea bags.
Let the tea marinate for a few minutes and give it a quick stir before serving. Enjoy!
