You’ve probably heard me say it before (or seen it, since I type these posts) but breakfast is my favorite meal of the day. I could eat it for most meals and be happy as a clam. Now, if you make a breakfast food that takes only a few minutes to prepare and that is portable enough for me to eat with my hands or in the car or on the go, then watch out world, because I will be taking you over…once I’ve eaten my pancakes!
Protein pancakes are great to make in bulk because they keep their taste and composition very well when refrigerated or frozen. Prepped pancakes make my morning effortless and help me make healthy food decisions when I come home starving after working all day and doing a hard workout.
This recipe should yield five to seven meals of pancakes. Of course that depends on how many you eat in one sitting and on how large you make them. Cover them with your favorite topping or toast them up and eat them plain!

Everyday Protein Pancakes
- 5 scoops Cellucor Vanilla protein powder (paleoso)
- 5 tbsp Coconut flour
- 2 tsp Baking powder
- 1 Very ripe banana
- 2 Whole eggs
- 6 Egg whites
- 3/4 c Unsweetened almond milk
- 1½ tsp Pure vanilla extract
- ¼ tsp Nutmeg
- Pinch of sea salt
- Stevia (optional, to taste)
- Non-stick oil or spray of your choice
First, microwave the peeled banana for 30 seconds. I find this helps soften it as well as make it a bit juicier. Mash banana with a fork.
Next, heat a large skillet on medium and add your preferred non-stick oil/spray.
Combine all the ingredients in a large mixing bowl.
Pour batter onto skillet and cook pancakes for about 1-1.5 minutes each side until golden and fuly cooked.
Once they cool, separate each pancake with a small piece of parchment paper and put into a large baggie in the freezer.
To reheat, either pop them in the microwave for a minute or try toasting them. Top you’re your favorite topping and ENJOY!
